The traditional orecchiette, also called "strascinati", are the most typical format of Apulian cuisine and are reminiscent of the hats that farmers wore to protect themselves from the scorching sun. This larger version goes ideally with hearty meat sauce, vegetable and mushroom-based dressings and is unsurpassed with ricotta and pecorino cheese. Available in packs of 500 g.
