The decaffeination process: Decaffeinated coffee is obtained by eliminating the caffeine from the beans that are still to be roasted: Lavazza uses this process in its pozzilli plant, which is exclusively dedicated to decaffeinating green coffee. The process used by Lavazza is unique in that it does not use solvents and uses carbon dioxide to better preserve the organoleptic properties and original aromas of the coffee.
