Linguine, also called Bavette or Trenette, are born in Genoa, and have the shape of a squashed spaghetti. They are the Ligurian long pasta par excellence. Created to accompany traditional pesto, they go very well with all vegetable and fish-based condiments.
Linguine are among the long semolina pasta shapes that are best suited to enhance the sauce. Thanks to the flattened section and the slightly convex shape, they are in fact perfect for capturing the sauce and returning all the variety of flavors.
Particularly appetizing even seasoned with a simple curl of butter, Bavette goes superbly with Genoese pesto, rich in all the scent of basil, one of the most important herbs of the Mediterranean gastronomic tradition.
