Linguine are the Ligurian long pasta format par excellence: in the form of small, flat and narrow tagliatella, they were created to accompany the traditional pesto.
Thanks to the flattened section and slightly convex shape, they are perfect for catching spices and returning all the variety of flavors.
They simply taste great with butter and sage or in combination with fresh tomato sauces, with vegetables and aromatic herbs or quick hot sauces, prepared with extra virgin olive oil, garlic, chili, anchovies and capers.
They are also ideal for fish-based sauces with shellfish and seafood and with "white" sauces prepared with milk cream, mascarpone, soft and processed cheese and spices such as saffron, horseradish, curry and ginger.
