Linguine are the Ligurian long pasta format par excellence: In the form of a small, flat and narrow tagliatella, they were created to match the traditional pesto. Thanks to the flattened section and the slightly convex shape, they are perfect for catching spices and giving back the different flavors. They go well with butter and sage or with fresh tomato-based sauces, vegetables and aromatic herbs or hot sauces made with extra virgin olive oil, garlic, chilli, anchovies and capers. They are also ideal for fish-based sauces with shellfish and seafood as well as for 'white' sauces with milk cream, mascarpone, soft and processed cheese and spices such as saffron, horseradish, curry and ginger.
