Among the innumerable versions of the macaroon, the Sedani in Naples seem to have been born smoothly with the name 'elephant teeth' and later acquired the ribbing similar to the celery ribs, some from Tuscany, which effectively superseded the name indigenous. The Sedani Rigati go well with artful spices such as meat and mushroom sauce or sausage, but are also ideal for preparing baked cakes or simply with tomatoes and basil. Available in 500 g packs.
