Vegetable Sauce
Sweet pepper from Altino combined with Italian tomatoes, aubergines, onions, carrots and only extra virgin olive oil and no flavourings: this is how De Cecco Vegetable Sauce is born, an inviting recipe created by the great Chef Heinz Beck, fresh, tasty and fragrant. Altino is a small town in the province of Chieti, nestled on a rocky spur overlooking the Aventine Valley. The typical peppers of the area are small, sweet, horn-shaped, deep red, called in the local dialect “a cocce capammonte”, meaning with the head pointing upwards, because this pepper grows upwards. In traditional cuisine it is used for a wide variety of dishes, from appetizers to first courses, to meat and fish main courses. It is important to remember that this prized Pepper is born in the "WWF Oasis of Serranella and Regional Nature Reserve, which is located within a Special Conservation Area in the Municipalities of Casoli, Altino and Sant'Eusanio del Sangro (CH). The area extends for approximately 302 hectares (plus another 200 hectares of buffer zone) in the lower Sangro valley at the confluence with the Aventino river. Of artificial origin, it quickly became a marsh full of life and important for the stopover of migratory birds. Lake Serranella, thanks to its position close to the Adriatic coast and the confluence of the Sangro and Aventino rivers, is one of the most important areas for the stopover of migratory birds in central Italy."
