Penne Lisce from the family of smooth, diagonally cut pasta is one of the best-known pasta shapes and is therefore also more versatile in the kitchen. The absence of scratches is offset by a surprising softness that gives sublime sensations to the palate. They are delicate and refined and maximally amplify aromas, flavors and fragrances. The term penne in the Italian language refers to the goose feather, which was previously used for writing and which was cut diagonally to create a thin line tip. The format, which is obtained from a smooth or striped noodle tube of variable length, has the characteristic diagonal cut that is typical of the pen. Penne is one of the few pasta shapes with a specific date of birth: In 1865 a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, applied for and received a patent for a diagonal cutting machine. The patent was important because it made it possible to cut fresh pasta in the shape of a pen in a variable format between 3 and 5 centimeters (half penne or penne) without crushing it. We read in the document that is kept in the Central State Archives of Rome: 'Until now it was not possible to obtain the diagonal cut, except with hand scissors, a method that was not only too slow and expensive, but also had the disadvantage one to produce irregularly cut and crush the pastes '. The ideal condiments for smooth penne are meat ragu in general: pork, beef, sausage, overcooked or stewed, or meat and mushrooms. They are also ideal for vegetable-based dressings and, due to their versatility, for all traditional Mediterranean recipes in general, such as the classic dressing with tomatoes, basil, extra virgin olive oil and a pinch of parmesan.
