The tomatoes, harvested at the right degree of ripeness in the months of July, August and September, are processed to preserve aromas, flavors and nutritional values. After washing and sorting, the skin is removed from the tomatoes with the steam, only then are the tomatoes chopped, pureed and concentrated.
