As with the oldest tradition of good Neapolitan coffee, for Kimbo roasting is a true art and the mission of the Kimbo roasters is to find the perfect coffee to get the best out of each blend. But what different degrees of roasting are there for coffee? We can distinguish between light, medium and dark roasts. This not only changes the appearance of the coffee beans, which become blacker when roasted darkly, but also the aroma. In fact, with a lighter roast the coffee is fruitier and brighter, while as the roast increases it becomes denser, more intense and more bitter.
