Orecchiette small ears also called strascicati are a typical form of dough from the culinary tradition of Puglia The shape is a round disc with a slight depression in the middle In the Apulian culinary tradition of homemade pasta orecchiette was made with white flour durum wheat semolina and water After the pasta dough was cut into small pieces it was dragged with the tip of a knife strascicati in Italian to form a kind of small bowl which was then pulled back with the tip of the thumb In traditional Apulian cuisine orecchiette is cooked in boiling water with broccoli or potatoes and served with tomato sauce and sheep s cheese or with garlic and oil This pasta is also known as recchie and is served with vegetable rag or lamb ricotta rag
